Jalapeno cornbread waffles with green chili chicken gravy. It’s what’s for brunch.



If you’re going to blow up your carb count on a single meal, I think it should be brunch. If you’re doing brunch right, you’ll have slept in, skipping breakfast altogether. You’ll even be a little late for lunch. Brunch is best around 1:00. It’s only really called brunch because eggs and bloody marys are usually involved.

I’m a big fan of many classic brunch dishes. Biscuits and gravy, huevos rancheros, and chicken and waffles are three of my favorites. Lately I have been thinking of how I could make them into a single dish.

This recipe is a hack. I pretty much just followed a recipe I found on Pinterest to make the eggs and chicken chili gravy.

cornbreadBut for the waffles, I wanted something a little more like huevos rancheros so I made jalepeno cornbread waffles. I cheated here too, using Krusteaz Honey Cornbread & Muffin Mix.

Here’s the batter recipe:

1 11 1/2 oz box Krusteaz cornbread muffin mix

1 can of hot peppers

2 eggs

1/3 melted butter

1 cup milk

Mix up your batter. Pour the batter into your waffle iron. Scoop your chili & eggs on top. Eat.

We made some regular waffles too. Just in case this turned into a flavor disaster. But all in all, it turned out pretty delicious. Next time I might add even more steps and add some actual fried chicken on top.
